Neither its either Senegal or Gambia the word jollof coms from the Wolof people of Senegal and Gambia who make a rice and fish dish. this method of cooking rice then spread to other african countries and they added their own twist, i’m nigerian would love to claim it but can’t!!!

Jollof are the people of the Wallof Empire in Senegambia and since rice is the stable food and grown in this area, I assumed it was traded down south and as a result the name was given to that imported rice.
